A 30-45 day ripening period in an aromatic cellar ensures the maturation of flavors, with a naturally occurring layer of yeasts releasing carbon dioxide.
Each disc of cheese is enveloped in nettle leaves, meticulously harvested daily from the farm. This age-old practice shields the cheese from excessive air or sunlight exposure, preserving its texture and flavors with finesse.
Storage & Care
To savor the essence of the cheese, present it at room temperature. When not indulging, preserve it within its vacuum pack, residing within your refrigerator’s cool embrace. Upon unwrapping, cocoon the cheese in plastic wrap to retain its essence.

Its rind bears the touch of potassium sorbate and natamycin as preservatives, coupled with annatto norbixin and natural paprika for color. Kindly note that the rind is not meant for consumption.
