Unlike other fishing methods, these sardines are hooked by the head, ensuring their delicate nature remains intact, free from bruising or damage. Each morning, these exquisite sardines are presented fresh at the fish market, where they are promptly processed. Meticulously cleaned and gutted by hand, they undergo a gentle steaming process to achieve their desired texture. Each sardine is individually packed and generously covered with overflowing extra virgin olive oil.
